Bacon & Peach Pecan Oatmeal
Take your oatmeal right to wow.
Oatmeal may be an easy, stick-to-the-ribs breakfast, but it’s just so blah. I’m always trying to find ways to kick this breakfast up a notch, and this sweet and savoury recipe checks all the right boxes for me.
The saltiness of the pecans and bacon pair perfectly with the peach preserves and maple syrup/brown sugar combo. Of course, there are endless combinations you can try to make this recipe your own — this combo is just the beginning!
Ingredients:
Note: This recipe serves two; amounts are also preference-based and can be changed to your liking.
Recipe for oatmeal, prepared to your liking (2 portions)
1/2 cup pecans, chopped
1 tbsp butter
Pinch of smoked sea salt
1/2 cup cooked bacon, crumbled
1/4 cup maple syrup
1/3 cup peach preserves
1 tsp fresh thyme (optional)
2 tbsp brown sugar (optional)
Directions:
Prepare oatmeal recipe and set aside.
In a small saucepan add 1 tbsp butter and melt on medium-low heat. Add 1/2 cup of chopped pecans and stir constantly. Pecans should be warmed throughout and just starting to brown/toast. Remove from heat and sprinkle a pinch of smoked sea salt on top, then aside in a small bowl.
In the same saucepan add 1/3 cup of peach preserves and 1 tsp of fresh thyme leaves (optional). Warm on medium-low heat until herbs and preserves are fully blended together. Remove from heat and set aside in a small bowl.
Using the same saucepan, add 1/4 cup of maple syrup and 1/2 cup of crumbled bacon; cook on medium heat. Stir constantly until syrup and bacon are fully incorporated and syrup begins to bubble around the bacon. Remove from heat and set aside in another small bowl.
In a serving bowl assemble your prepared toppings: oatmeal, pecans, bacon, preserves. You can drizzle extra syrup on top or sprinkle 1 tbsp of brown sugar on top of each.
