Baked Brioche French Toast

An overnight treat worth waiting for.

Growing up, French toast was always my father’s specialty, and it’s hard to mess with a dish that evokes so many wonderful memories, but this dish definitely gives Dad’s recipe a run for its money.

I love the versatility of this recipe, and you can mix and match spices and fruit with endless tasty combinations. You can also make this recipe the morning of, but you’ll need to soak the bread for at least a couple of hours to ensure the brioche is saturated all the way through. If you bake it too soon, the egg mixture will simply rest on the bottom of the casserole dish and the top of your French toast bake will be dry.

Ingredients

  • 1 medium-sized loaf brioche bread cut into 1” chunks

  • 4 eggs

  • 1/2 cup skim milk

  • 1/2 cup cream or whole milk

  • 1/3 cup brown sugar, lightly packed

  • 2 tsp vanilla extract

  • 1 tsp cardamom -OR- cinnamon

  • 1/4 tsp nutmeg

  • 2/3 cup berries (fresh or frozen)

  • icing sugar for garnish


Directions

Note: This recipe makes 3-4 servings.

  1. Cut the brioche into 1” cubes. Lightly grease a small/medium-sized casserole dish and place the brioche cubes inside. (Bread should sit about 2” deep.)

  2. In a medium-sized mixing bowl, mix together 4 eggs, 1/2 cup of skim milk, 1/2 cup of cream/whole milk, 1/3 cup of lightly packed brown sugar, 2 tsp of vanilla extract, 1 tsp of cardamom -OR- cinnamon, and 1/4 tsp of nutmeg. Mix ingredients together until fully incorporated.

  3. Gently pour the egg mixture over the cubed brioche until all bread is fully covered. Lightly press down any pieces of bread not covered with liquid, then cover and place in the fridge overnight.

  4. The next morning, sprinkle 2/3 cups of berries (fresh or frozen) on top of the bread mixture.

  5. Preheat the oven to 350°F and bake covered for 25 min, then uncover and bake for 20-25 min more or until French toast is fully set and golden brown on top.

  6. Remove from oven and sprinkle with icing sugar.

  7. Serve as a breakfast main or part of brunch and enjoy.
