Creamy Tomato Basil Soup - Recipe Cheat

I honestly don’t know anyone who doesn’t love the classic tomato soup and grilled cheese comfort combo, and this recipe cheat elevates your soup to something far better than just soup out of the can.

Ingredients:

(Note: This recipe serves soup for four.)

  • 1 can tomato soup

  • 284 ml of milk (enough to fill an empty soup can)

  • 1/3 cup water

  • 1 large can of diced tomatoes (796ml/28 oz)

  • 3/4tbsp dried basil

  • Pepper to taste

  • Fresh basil leaves to garnish (optional)


Directions:

  1. In a large saucepan add the contents of 1 can of tomato soup, 1 can’s worth of milk (284ml), and 1/3 cup water. Whisk together and bring to a low boil on medium heat.

  2. Add in 1 large can of diced tomatoes and 3/4 tbsp of dried basil and stir to mix. Reduce heat to low heat and simmer for ~5 minutes until flavours are fully incorporated.

  3. Transfer portions to soup bowls and garnish with cracked pepper and fresh basil leaves.

  4. Serve and enjoy!


Note: Don’t forget to play with this easy-cheat recipe by flavouring your soup with different herbs or tossing in some leftover rice or gnocchi. You can also add spice with a pinch of cayenne powder or chili pepper flakes, and don’t forget your garnishing with toppers like crispy fried onions or even jalapeños!
