Curried Popcorn
Spice things up with this exotic treat.
Is there anything more hypnotic than the smell of popcorn? Now take that buttery, salty deliciousness and give it an exotic twist with just a few ingredients that will make you more of a popcorn addict than ever. —CFG
Ingredients
8 cups of popped plain popcorn
2 tbsp butter flavoured coconut oil
1 tbsp curry powder
1 tbsp dried, crushed curry leaves
Directions
Turn on oven to 250F. Pop 8 cups worth of plain popcorn. (You can also cheat and use pre-popped popcorn — I use BoomChickaPop when I’m not making my own.)
Line an extra large baking tray with parchment paper and transfer the popped popcorn to the tray. Spread the kernels out into a single layer and place in warmed oven while you prepare the topping.
In a microwave safe bowl, add 2tbsp of butter flavoured coconut oil and 1tbsp of curry powder. Melt in the microwave for ~30-45 seconds; once oil is fully melted, stir the liquid so the curry powder becomes incorporated.
Remove the baking sheet from the oven and drizzle the coconut oil/curry mixture over the popcorn, pausing to gently toss the kernels with a large spatula (or your hands - gloves recommended). Continue adding oil mixture and tossing popcorn until all kernels are sufficiently covered. Sprinkle popcorn with 1tbsp of dried, crushed curry leaves and transfer to a serving bowl.
