Lemon Coconut Blondies
Nothing beats a sweet, nutty blonde.
With warmer days on the horizon, blondies feel like a pretty good idea — now add in lemon and sweetened coconut and suddenly you’ve got the perfect treat.
I always love the brightness of citrus in desserts, and I’ve never met a recipe with coconut in it that I didn’t love. Pair these great flavours in a soft and chewy square and the only thing you’re missing is the summer breeze blowing through your hair. — CFG
Ingredients:
1 cup all-purpose flour
1/2 tsp baking powder
1/8 tsp baking soda
1/2 tsp salt
1 cup shredded sweetened coconut
1/3 cup butter, melted
1 cup packed golden brown sugar
1 egg, beaten
1 tbsp vanilla extract
1 lemon, juiced
zest of one lemon
Directions:
Preheat oven to 350°F
In a medium mixing bowl sift together 1 cup of all purpose flour, 1/2 tsp of baking powder, and 1/8 tsp baking soda. Stir in 1/2 tsp of salt and 1 cup of sweetened shredded coconut. Set aside.
In a microwave safe bowl, melt 1/3 cup of butter. Cool slightly and then add 1 cup of packed brown sugar and stir until completely mixed.
In a large mixing bowl/stand mixer add 1 egg and mix together with 1 tbsp vanilla extract, the zest of one lemon, and the juice of one lemon. Add in brown sugar/butter mixture until ingredients are fully blended.
Slowly add in the flour mixture, mixing all ingredients just until combined.
Transfer the batter to an 8 x 8” greased pan. (You can also skip the grease by lining the pan with a piece of parchment paper.)
Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
Let the blondies cool completely, then remove from pan. Cut into desired size and serve.
