Next Level BBQ Chicken Pizza

Take savoury and sweet to new heights with this secret ingredient.

Pizza is a staple in our household, and I’m always looking for that ‘next level’ combination. We typically make pizza from odds and ends in the fridge, and this combo was no exception. It’s the first time I’ve made our favourite flatbread pizza this way, but it won’t be the last.

Ingredients:

Note: Ingredient portions depend on how many pizzas you’re making so I’ve left quantities up to you!

  • Flatbread crust (or your favourite pizza crust)

  • BBQ sauce (I use Stubb’s for the low sugar content)

  • Cooked chicken, shredded

  • Sautéed onions (optional)

  • Old cheddar cheese, shredded (or other sharp variety)

  • Arugula

  • Heritage style strawberry jam


Directions:

  1. Preheat oven to 400°F and prepare your cooking sheet with a piece of parchment paper.

  2. Assemble ingredients on parchment lined paper. Spread bbq sauce onto flatbread crusts (I cook right from frozen) and sprinkle with shredded cooked chicken; top with sautéed onions (optional).

  3. Sprinkle a generous portion of cheddar cheese on top and place in preheated oven.

  4. Cook for 10-15 minutes or until cheese is fully melted and crust is browned.

  5. Switch oven setting to ‘broil’ and continue cooking until cheese is bubbly and browned to your liking.

  6. Remove from oven and top with a generous portion of arugula.

  7. Let pizza sit for ~5min to allow toppings to set.

  8. Slice flatbread pizza as desired; place a teaspoon of heritage-style strawberry jam on each pizza slice.

  9. Serve and enjoy.


Note: Don’t forget to serve with a bit of fresh shaved parmesan or a sprinkle of chili pepper flakes. My favourite addition is a side of pickles!
