Savoury. Crispy. Chewy. Cheesy. Need I say more?

I like to think of savoury bread pudding as stuffing’s cosmopolitan counterpart. My classic turkey stuffing has a few basic ingredients, but bread pudding has more complex layers and flavours that make it a delicious dinner partner or standalone item.

This recipe uses sourdough bread, chorizo sausage, mushrooms, fresh thyme, cream, goat cheese, and parmesan. (I used a block of Boursin this time and it was incredible!)

Ingredients:

  • 1 round loaf of sourdough bread

  • 5 eggs

  • 1/4 cup fresh thyme leaves, stems removed and chopped

  • 1 cup thin sliced chorizo sausage

  • 6 mushrooms, stems removed, sliced

  • 1/2 medium red onion, finely chopped

  • 1.5 cups cream

  • 1/3 cup fresh parmesan, finely shredded

  • 1 package Boursin cheese -OR- 5 oz goat cheese (plain or herbed)


Directions:

  1. Preheat oven to 375°F

  2. Cut sourdough loaf into bite-sized cubes. (I prefer to tear the pieces for a more rustic presentation.)

  3. Spread pieces onto a cookie sheet and place in the oven on 250°F just until the cubes start to dry out. (This stops your bread pudding from becoming too soggy — if you like a softer texture with more moisture you can skip this step.)

  4. In a medium-sized mixing bowl add 5 eggs, 1/4 cup of fresh thyme, and 1.5 cups of cream. Mix thoroughly.

  5. To the egg mixture, add in 6 sliced mushrooms, stems removed, 1 cup of thinly sliced chorizo sausage, and 1/2 a medium onion, finely chopped. Stir until completely mixed.

  6. Transfer the sourdough bread chunks to a greased 10”x10” casserole dish and pour the egg mixture over the bread. With your hands, gently mix the bread and egg mixture together until all bread chunks are fully coated.

  7. Sprinkle chunks of 1 package of Boursin cheese over the mixture.

  8. Top with 1/3 cup of finely shredded Parmesan cheese.

  9. Place casserole into preheated oven and cook for ~45 minutes or until golden brown and crisped to your liking.

  10. Pair with your favourite meal and enjoy!

Note: Don’t forget to great creative! Change out thyme for fresh basil, parsley, or rosemary. Swap in different kinds of mushroom and cheeses, and don’t forget to vary your meats — try a classic farmer’s, honey garlic or spicy Italian sausage — or skip the meat entirely. There are so many ways to make this dish amazing!
