Hawaiian Tropic Cocktail

The perfect summer cocktail for a perfect summer day.

I love all things coconut, and a piña colada is no exception, but they’re so heavy on the tummy and filled with so much sugar that I rarely ever indulge. This cocktail is the perfect solution — all the flavours of your favourite blended drink, but infinitely lighter and a lot less calories to boot.

If you can’t get your hands on pineapple Bubly try a plain club soda with pineapple bitters or a splash of real pineapple juice. The trick is to use just a little so you can keep the heavy sweetness down to a minimum while maxing out on the flavour. Amoretti syrups are also great because of their low sugar content and intense flavour concentrations (think half the calories and sugar). Whichever way you pour these you’re sure to enjoy. —CFG

Ingredients:

  • juice of 1 lime plus slice for garnish

  • 1/2 can pineapple flavoured Bubly

  • 1 1/2-2 pumps Amoretti coconut cream syrup

  • 1 1/2 oz Malibu rum (or other coconut flavoured rum/vodka)

  • ice


Directions:

  1. Fill a tumbler or cocktail glass half full with ice. Add 1 1/2-2 pumps of coconut cream syrup (depending on how much sweetness you prefer). Squeeze in the juice of 1 lime.

  2. Add 1 1/2 oz of Malibu rum (or other coconut flavoured rum/vodka) and top with 1/2 can of pineapple Flavoured Bubly.

  3. Thoroughly stir contents with a cocktail spoon and garnish with a twist of lime.

  4. Serve and enjoy!
