Tri-Color Tomato Feta Salad
quick and delicious, perfect for any meal.
There’s something so tempting about tri-coloured tomatoes, and I can never resist buying them when they come to market. Of course they would go great in a typical green-leaf salad, but letting these jewel-coloured jams stand on their own is kind of spectacular.
The dish takes only a few minutes to prepare and goes wonderfully with main courses, but my favourite way to serve this salad is with breakfast. It goes great with eggs and toast — or my personal favourite, spanakopita. Whichever way you enjoy this salad you won’t be disappointed. — CFG
Ingredients:
Note: Portions below are listed for 2, but can easily be doubled for larger servings.
Tri-color vine-ripened tomatoes, 2 of each colour (orange, yellow, red)
2 tbsp cooked crumbled bacon
1/4 cup crumbled feta
1-2 tbsp chopped green onion
olive oil
Directions:
Slice each tomato into four wedges and place in a small mixing bowl. Add 2 tbsp of cooked crumbled bacon, 1/4 cup of crumbled feta, and 1-2 tbsp of chopped green onion to the bowl. Gently toss.
Drizzle with olive oil and gently toss one more time.
Serve and enjoy!
