‘Nduja Indeed

Based on a southern Italian specialty, ‘nduja (pronounced “inn-doo-ya”) is a spreadable sausage that will have you hooked from the very first taste. And while this may not be an authentic ‘nduja made with roasted Calabrian chilli peppers, I’m confident the spirit of the flavours checks all the right boxes.

I also love this recipe because portions are less about a cup of this or tablespoon of that, but more about what flavours you want to come through— and even what ingredients you have on hand. I like to add different kinds of peppers, spice things up (or mellow them out) depending on who I’m serving this to and how I’m serving it— this is great with your antipasto platter, goes wonderful on fresh pasta, and hits the spot as a pizza base, too.

Ingredients

  • 1 pkg of charcuterie-style deli meat (salami, calabrese, etc.) (500g)

  • 1 can tomato paste

  • Handful of fresh basil

  • 1/2 cup Sundried tomatoes (optional)

  • 1/4 cup Banana peppers (optional)

  • 1/4 cup Olive oil


Directions

  1. Add all ingredients (except olive oil) to food processor and blend.

  2. With the food processor on, slowly add in olive oil until a smooth paste is created.

  3. Serve and enjoy!
