Watermelon & Feta Salad
Fresh, juicy, salty and sweet. Bring on the summer salads.
Nothing says summer like this feta and watermelon salad- it’s the perfect pairing with your best Mexican dishes or a great side dish when you’re looking for something other than potato salad for your summer entrees.
I can never get enough cilantro, but for those who think it’s a ‘soapy’ herb, try substituting the leafy green with sweet basil instead. It changes the flavour profile a bit, but still has a wonderfully summer taste to it. —CFG
INGREDIENTS:
8 cups seedless watermelon, cut into 1” cubes
1 bunch fresh cilantro
4 limes
2/3 cup crumbled feta
1/3 cup red onion, thinly sliced
Olive oil
Salt & pepper to taste
Directions:
In a large mixing bowl add 8 cups of seedless watermelon cut into 1” cubes. Add in the juice of 4 limes and 1/3 cup of thinly sliced red onion. Gently toss.
Wash cilantro and remove excess water using a kitchen towel or salad spinner. Remove the stems and roughly chop. Add half of the bunch to start and add more to taste.
Crumble 2/3 cup of feta over the top of the salad. Drizzle with a generous portion of olive oil and a pinch of fresh ground sea salt and pepper. Gently toss one more time to fully incorporate ingredients.
Serve and enjoy!
Note: Anywhere from 5-20% of people say that cilantro tastes ‘soapy’. This is thanks to a unique genetic variation that allows someone to detect aldehydes—a by-product of soap that also exists as a compound in cilantro.
