Figs & Espresso à La Mode

You won’t need a coffee to go with this dessert.

Figs are one of my very favourite fruit— they’ve got the most gorgeous colour and texture, and they can be mild in flavour or intensely sweet. They’re great fresh, dried, on pizza, in salads, you name it.

This recipe goes right to the core of my love for all things Mediterranean, and the intensity of the espresso pairs perfectly with the jammy fig flavours and a scoop of vanilla ice cream. — CFG


Ingredients:

Note: This recipe serves dessert for two.

  • 10 Mission figs, washed, stem cut off

  • 2 shots espresso OR 1 cup strong brewed coffee

  • Hot water (if using espresso shots)

  • 6 tbsp brown sugar (not packed)

  • 2 pinches of cinnamon

  • Vanilla ice cream

  • Thyme sprig (optional, for garnish)


Directions:

  1. Wash and remove stems from figs. Slice in half and arrange in a bowl in the shaped of a five-pointed flower.

  2. Prepare 1 cup of strongly brewed coffee -OR- 2 shots of espresso and enough hot water to fill 1 cup.

  3. Transfer brewed coffee to a small saucepan and add in 6 tbsp of brown sugar (not packed) and 2 pinches of cinnamon.

  4. Whisk together and bring to a boil, stirring constantly. Boil down until mixture reduces and creates a syrup. Mixture will be done once sugars start to bubble vigorously. Remove from heat.

  5. Place one scoop of vanilla ice cream in the center of the figs, then spoon about half of the coffee syrup into bowl. Drizzle syrup over each of the fig halves andice cream. Garnish with a small sprig of fresh thyme.

  6. Serve and enjoy!
